Choice between Bankruptcy and Foreclosure

Insolvency proceedings are a legal act that is registered by a person who cannot pay their debt as agreed. Once bankruptcy is filed, all the civil proceedings related to the home loan are stopped. As such, a mortgage creditor has to stop all collection processes, foreclosure among them. However, a lender may apply for relief from the mandatory stay, and if it is allowed, can continue with the aforementioned process. Declaring Bankruptcy will not halt foreclosure and you have to pay back your home loan. Bankruptcy just makes the foreclosure process go forward slowly, it does not solve the underlying issues.

Looking to have some fun with friends while sharing some wine? You should consider hosting a wine tasting party. It’s a really neat way to share your wine favorites and to be introduced to a variety of new and interesting wines. You can also add some spice to your fun by using a wine theme (”All About Reds“, “Blindfold Tasting”, etc.).

Party Size
You don’t need a lot of guests to have a great party. What I have found works best is to have about four to twelve people, and definitely include yourself as one of the registered guests. Also, I like to always have a contest during the party and give away a gift.

Theme Selection
Pick a fun theme, and remember the theme also determines what wines will be poured. You can name a theme like “The Great Italians”, “The Great Whites of California”, or whatever fits your mood. I would suggest being very creative, the possibilities are endless. If you tell your local wine merchant your theme, they can be a great source of help with wine and theme matching. Also, at a minimum make sure you have 4 to 6 different wine types to taste.

Food Choices
Have you heard the saying “First the wine, then your menu”? If you had a theme for your party and your wines followed that theme, you may want to carry it through with whatever food you serve. For example if you are tasting Italian Reds why not serve some Italian munchies to match.

While you do need to provide foods that complement the wines provided, the food should not the backbone of the party. Focus on the d’oeuvres such as: cheese, fruit, unsalted crackers, bread or other munchies you may have prepared for the evening. Don not forget to have lots of bottled room temperature water and optional spit buckets available.

When all the tasting is done, you may want to have plenty of coffee and desserts. This is also a great time to break out one of your favorite dessert wines.

To experience the full pleasure of the wine, it is important that you serve them at the correct temperature. Below are the basic temperature guidelines:

Serving Considerations
There are important factors to consider when pouring the wine at a Wine Tasting Party.

1. Fill the glasses only one-third full. This will prevent anyone from swirling the wine on your tablecloth or carpeting.
2. Expect to serve about eight to twelve samples from each 750 ml bottle.
3. As a rule, serve white wines before red wines and dry wines before sweet.
4. Blush wines are served as you would serve a rose, in-between the white and the reds.
5. The serving order is more common sense than etiquette.
6. Sweet wines have a tendency to over power the taste buds giving a sensation of bitterness to the dry wines.

Sights
The first step in the tasting process is to examine the wine and take note of the color, clarity, and transparency of the wine. Young wines are typically very clear. Older blends may be expected to have a little sediment. There is a lot to this and it takes a bit of experience to understand which hues are right for each type.

Smell
The second step is in the pleasure of smelling the wine. Swirl the wine around in the glass which awakens its aromas or bouquets. It is important to take a good sniff of the bouquet and try to detect unique fragrances. If are new at this, don’t fret, you will get better over time.

Taste
Now the fun part of actually tasting the wine. Take a sip and roll the wine over your tongue. Different parts of the tongue will register different tastes so be sure to roll the wine around in your mouth. Try to focus on the characteristics of the wine, such as body, sweetness, tartness, bitterness, and fruitiness. You should also take notice the subtleties of the wine’s aftertaste.

History of the Mendocino County Wine Industry

The history of wine production in Mendocino dates back to the mid 19th century. The first Europeans to settle in the region were Russian hunters and trappers. They made their living selling seal and otter pelts.

The Gold Rush caused the population of the San Francisco Bay Area to expand dramatically. The local timber industry took off with the increase in demand for building supplies.

The first grapes were grown during 1850s by failed gold prospectors. The wine produced during this era had a mainly local customer base due to the isolation of the region.

In 1851, the Anderson Valley was discovered by accident. Italian immigrants planted vineyards on the sunny hillsides of the valley during the ensuing generation.

Even when the railroads were extended north, Mendocino’s Wine Industry remained relatively unknown in the national and international markets. Despite the region’s obscurity, there were over 5000 acres of vineyards and several wineries during the late-ninteenth century.

Phylloxera and Prohibition

Most of California Wine Country was hurt by the spread of the Phylloxera Louse in the late 19th century. Despite the damage, the isolated region fared better than some other parts of the state. The industry rebounded after the utilization of Phylloxera resistent rootstocks. In the 1910s, there were close to 6000 acres of vineyards in Mendocino County.

Prohibition was almost a death sentence for the region’s wine industry. With a few isolated exceptions, almost all was lost. A few Zinfandel vineyards in the Mendocino Ridge survived and are thankfully still alive today. However, all of the wineries were closed during Prohibition.

The Parducci Family is credited as being the stewards of the wine industry during the ensuing difficult years. In the 1960s they owned and operated the only winery in the county. It is located near the Redwood Valley.

The Renaissance

The industry began to come alive with the rest of the California wine industry during the 1960s and 1970s. In 1968, the Fetzer family established a winery near the McDowell Valley. Finally the Parducci Family had some company. Substantial investment went into planting vineyards, but not much wine was actually produced in Mendocino. Most of the region’s grapes were sold to non-resident wineries and used in faceless blends.

Thankfully, this has changed. There are currently many high-quality wineries in the county. In recent years, the region has gained a reputation for producing many varietals exceptionally well. The practice of shipping grapes to other regions for production lessened as the large AVA’s renown increased. It currently contains over 15,000 acres of planted vineyards.

History of Arabian Coffee

Arabian coffee is the quintessential coffee of the world. Arabia lends its name to the highest quality coffee plant in the world, Coffea Arabica. Arabian coffee accounts for about 80% of all coffee produced in the world. It prefers higher elevations and drier climates than its cousin C. robusta.

The tropics of South America provide ideal conditions for growing Arabian coffee which grows best between 3,000 and 6,500 feet but has been grown as high as 9,000 feet. Generally, the higher the plant is grown the slower it matures. This gives it time to develop the internal elements and oils that give coffee its aromatic flavor.

Coffee was originally discovered in Ethiopia, just across the Red Sea from Arabia. Coffee soon made its way to Yemen where it was embraced by the Islamic people. Soon it became a beverage endorsed by the Islamic clerics as drinking alcohol was prohibited in their religion. Arabian coffee soon came to be known as an Islamic beverage.

Arabian coffee was exported to Europe where the people embraced it. However, the Catholic Cardinals shunned it as the ‘Devil’s drink’ and tried to have it banned.

But then Pope Clement VIII decided that it would be imprudent to ban the beverage without having tasted it, so he summoned a sample. As legend has it, the Pope was immediately enamored by the distinct, pungent aroma and taste. He decided that to banish the delightful drink would be a greater sin. So he baptized it on the spot claiming that it would be a shame to let the impious ones have this delightful drink all to themselves.

Arabian coffee is still a part of the Islamic faith and is use in ritualistic ceremonies.

Arabian coffee growers protected their monopoly on the prized plant. They were the exclusive providers of coffee throughout the world for several hundred years.

That is until a coffee plant finally made its way to the Caribbean. This began a new legacy of high-quality coffee in Latin America.

It is said that all the Arabica coffee grown in the world started from this plant as cuttings were transplanted all over the world. Arabian coffee is truly the source of coffee throughout the world.

The word mocha comes from the name Mokha, the shipping port in Yemen where all Arabian coffee was exported. Mocha has become a term used for describing a coffee beverage in which chocolate is added. But originally it had nothing to do with chocolate.

Homemade Fishcakes - simple as simple gets. This makes 8 good sized fish cakes

Put 4 large baked potatos in the oven, gas mark 220. Rub sea salt into the skins and then turn the potatoes every 20 mins or so. They will take about 1 hour and 45 minutes.

When the potatos are nearly ready, get a baking tray and place foil down - leave enough so you can wrap the fish up!
Place 3 salmon fillets and 2 cod fillets onto the tray. Sqeeze a little lemon and drizzle a little white wine if you have any! Wrap the fish up and cook for 12-15 minutes or untill cooked. Please low down the oven as opposed to the top where the potatoes should be
Once cooked take the potatoes and fish out. Leave both to cool.
Flake the fish and the inside of the potato into a bowl, add salt, pepper and a few knobs of butter.
Lightly blend the mixture, but be carefully not to mash! Add about 2 handfuls of finely chopped spring onions and about 1 handfull of finely chopped parsley.
Once all the mixture is together, put in a fridge and leave for a few hours untill chilled.
Once chilled you can make the mixture into round patty shapes and again leave to chill for at least half an hour

You then have 2 options
Option 1 - lightly dust in seasoned flour (sale & pepper) flour and fry straight away
OR
Option 2 - dust in flour, then in eff then in breadcrumbs. Dont buy shopped breadcrumbs use some bread toast it and crunch up to make your own crumbs but remember season them!

Serve with a wedge of lemon and salad with perhaps a oil and balsamic reduction dressing

Mix together all ingredients except chicken, and then marinate the chicken chunks overnight in the refrigerator. After marinating, place each vegetable, pineapple chunk and chicken on a skewer and grill until done.

You can also use part of the above ingredients to create wonderful dipping sauce for your Thai barbeque chicken. Just do not use the sauce that you have marinated the chicken in overnight. Just use enough of the sauce to cover the chicken and reserve the rest for your dipping sauce. Everyone will love this tasty recipe and you will love trying coconut milk for many of your bbq sauces. Pineapple and coconut milk will give your favorite barbeque sauce a new flavor that not many people have tried, but once they do they love the flavor.

Webcam - How to Choose

With the growing availability of high bandwidth internet connections getting a webcam and staying in touch with friends and family has never been easier.

What is a Webcam

A webcam is a small video camera that takes still or moving images and sends them to your PC via a USB cable. The quality of image capture is determined by the webcam’s lens, optical sensor and the frame rate the camera can transmit.

The best available resolution is 640×480 and the frame rate is almost always 30 frames per second. If your looking to take movie clips then you will need a camera with a high resolution and frame rate. If you want to use your video camera for video conferencing, you could go for a cheaper, lower-spec camera but with the ever increasing availability of high bandwidth internet connections and VoIP software such as Skype, I would recommend going for a good quality camera.

PC specification and your Webcam

At this point it would be a good idea to check the minimum specification required to run the webcam of your choice, and whether your PC meets that specification. The majority of current webcams require at least Windows 98 Second Edition to work properly. Minimum processor requirements generally vary from 350MHz to 700MHz but I would suggest a processor speed of at least 1000MHz. RAM specifications vary from 128MB to 512MB. Manufacturers of webcams will generally state a wide compatibility specification, however, a good rule of thumb would be to take the top specification mentioned for your webcam and use that as your minimum specification requirement.

Ok your PC has met the minimum RAM and Processor specification for your webcam, the next thing to think about is the kind of port your webcam is going to plug into. The majority of webcams manufactured in the past five years plugs in to a USB port. However, there are two kinds of USB ports older USB1.1 ports (12Mbit/s) and the more recent USB2.0 ports (480Mbit/s). These two types look identical and you can plug a USB2.0 port into a USB1.1 socket and you can plug older USB1.1 devices into a USB2.0 port, however, only a USB Hi-Speed device on a USB2.0 port will transfer data faster than 12Mbit/s.

Upgrading your PC to meet your webcam requirements

Before you undertake any upgrade, you need to compare your PC’s specifications to the minimum requirements of the webcam you want to install. Check out the need to know below before you take the plunge.

A webcam’s manufacturer will specify certain minimum requirements that your PC should meet if it is to work successfully with the device. These generally include the version of Windows on your PC, your processor’s speed and the amount of RAM fitted.

Some webcams use a USB Hi-Speed connection. Before you buy one of these cams check to see if your PC has USB2.0 ports. If your PC runs a version of Windows older than XP then it almost certainly doesn’t have USB2.0 ports.

Most current webcams come with a built-in microphone, but a few don’t. Before you buy, check to see if your webcam has a microphone, if it doesn’t you’ll have to buy one that plugs into your sound card.
